Dairy Free Chocolate Chia Seed Pudding
I have to admit I have a bit of a sweet tooth. So naturally I love creating healthy deserts that the whole family can enjoy and know that our bodies will not hate us the next day! You can enjoy this chocolate chia seed pudding knowing that you are all the ingredients hold nutritional value. Raw cocoa is rich in antioxidants and minerals, chia seeds are full of fiber, coconut milk provides healthy fats and even the raw local honey provides antioxidants and anti-bacterial properties. You can enjoy this a delicious breakfast, afternoon snack, or as an evening dessert!!
Ingredients:
- 1 Can Full Fat Coconut Milk
- I cup Filtered Water
- 1/2 cup Chia Seeds
- 1/4 cup Raw Cacao Powder
- 1/4 cup Raw Cocao Nibs
- 1/4 cup Raw Local Honey (substitute maple syrup for vegan)
- 1tsp Vanilla Extract
- 3 TBSP Dairy Free Dark Chocolate Chips
- optional 2 scoops Collagen Peptides for added protein
Directions: In a blender add all ingredients except for the chia seeds and chocolate chips. Blend until there are still some tiny chunks of cacao nibs present. In a large bowl add your chia seeds then pour your chocolate mixture into the chia seeds and mix completely. Add mixture to the fridge. Check periodically every 30-45 min and stir to make sure the chia seeds are not clumping in huge clumps. When the mixture is more solid fold in chocolate chips. Wait 3-4 hours or overnight to eat. Enjoy this deliciousness!!
