Vanilla Chocolate Sunbutter Chia Seed Parfait
Who doesn't love a good parfait! I personally love experimenting with chia seed puddings adding different ingredients. I have a love for peanut butter and chocolate which pushed me to come up with this recipe and substitute sunbutter instead of peanut butter to make it healthier, paleo and more allergen friendly. Of course you can always sub in peanut butter if your heart desires!! Since chia seeds absorb tons of liquid and expand they are a great alternative to make a healthy pudding. They are very similar to tapioca consitancy (gel like) except smaller in size for those who are unfamiliar with them. This recipe will fulfill your cravings without all the guilt. It is full of nutrient packed whole foods such as coconut milk, raw cocoa, and chia seeds. Yes, there is some natural sugar from the maple syrup, but maple syrup also is also filled with minerals such as magnesium, calcium, iron, and zinc, and has anti inflammatory properties and contains antioxidants. So treat yourself to this delicious pudding for a dessert, snack, or even breakfast!!!!
Servings: 6-8
Ingredients for Vanilla Pudding:
- 1 Can Full Fat Coconut Milk
- 1/2 cup Filtered Water
- 2 1/2 TBSP Maple Syrup
- 1/4 cup + 1TPSP Chia Seeds
- 1 tsp Vanilla extract
Ingredients for Chocolate Sunbutter Pudding:
- 1 can Full Fat Coconut Milk
- 3/4 cup Filtered Water
- 1/4 cup Sunbutter
- 1/4 cup Chia Seeds
- 1 TBSP Raw Cocao Nibs
- 2 TBSP Raw Cocao Powder
- 2 1/2 TBSP Maple Syrup
- 2 TBSP Dairy Free Chocolate Chips
- 1-2 Bananas sliced for topping
- Additional Chocolate Chips for topping
Directions: First add all the ingredients for the vanilla pudding except the chia seeds to a blender and blend on low-med speed until all ingredients are mixed. Add your dry chia seeds to a bowl and add in the blended liquid mixture. Stir until chia seeds are mixed together, cover your bowl and put into the refrigerator for 4 hours to overnight for pudding to set. Occasionally stir mixture to disperse the chia seeds. No need to rinse the blender! Just add in the the chocolate pudding ingredients everything but the chia seeds once again. Blend until mixed completely. Now add the chia seeds to a second bowl and add in the wet ingredients. Repeat the same steps as you did for the vanilla pudding. Set in refrigerator. When both puddings are set you can make your parfaits by layering the two puddings as you like and add chopped banana and some chocolate chips. Enjoy!!
