Fox 21 News Live with Me: Giving You Tips On Eating Healthy
Hello Friends!
The past few week have been quite overwhelming for me. School just started, soccer season started for my oldest, my little one is breaking another tooth so she is not sleeping very well, I've been working hard on this blog ( yet I feel there is still not much to show), and I just recently went live again on our local morning news with 6 segments in one morning!! I know I will get into a routine again, but my little one just seems to not want to nap at all during the day recently which means I don't get very much time to get what need to get done around the house. I know many of you can probably relate to my hectic life. There just seems to never be enough hours in the day to get everything accomplished!!
Work, sports, housework, babies, they all take a ton of our time and it can be so overwhelming and stressful that many of us can't manage to figure out how to additionally take care of our health by preparing home cooked meals, eliminating all the processed foods and getting in some movement/exercise. But, I promise you it can be very manageable if you follow some simple steps.
We all use our calendars to schedule in sports, events, daily activities and meetings. So just like you would any other important event or activity you might have it is also very helpful to schedule days and times to do your cooking for the week and your shopping. It is as simple as setting aside a day to find recipes you like, make your grocery list and then take a couple hours to whip up a few meals for the week. I always like to double recipes so I will have leftovers. Pack school lunches the evening before, and if you work away from home pack your own food the night before. Setting aside some time each week is key! For myself since I do not work away from home I usually cook a meal on Sunday which will last for two meals during the week. then I will plan something simple like salads or something I can quickly prep in the crock pot. One of my favorite things to do is cook up a batch of taco meat (2-3lbs) and use it for multiple meals. It can be as simple as chopping some romain lettuce topping it with taco meat and some avocado, or I can make some tacos one night with my favorite tortillas Siete Foods. They have a Cassava/coconut flour tortilla, and almond flour tortilla, and they just came out with a new one that is cassava and chia seed tortilla. I also will get an already cooked rotisserie chicken from Whole Foods on their chicken sale day. I take the meat off the bones and make chicken salad for lunches, use it for salads, add to stops or other dishes and then I take the bones and make bone broth.
It's not about perfectionism!! If buying an already cooked chicken will make your life easier than do it! It is REAL FOOD you are not going to Mc Donald's and you are not buying TV dinners. So by all means don't feel bad buying a good quality chicken or some delicious gluten free/grain free Siete Family Foods Tortillas instead of making your own!
Breakfast, packing school lunches, and afternoon snacks can also be a challenge especially when you have multiple children like me. Trust me, I know how difficult it can be to get everyone to eat the same thing! But just like preparing healthy dinners it is totally manageable. Eggs are always loved at our house but on crazy hectic days I will make everyone a smoothie, or grab some full fat grass fed yogurt and top it with berries and a drizzle of honey. I always keep some gluten free/grain free granola as well either some I have made myself or store bought. My kids love hard boiled eggs, turkey roll ups, egg muffins, tuna salad with good avocado mayo. Add some fruit and chopped carrots or other veggies and some nuts and you have a lunch. For afternoon snacks that are great for on the go try making a batch of homemade trail mix. I like to mix different nuts together, add coconut flakes, raisins, dark chocolate chips, banana chips and mix everything together. My Energy Ball and Zucchini Blueberry Muffin recipes make great snacks as well.

It's really totally possible I want you all to know that. Yes, it will take some time out of your week, but that time is totally manageable if you et it aside each week. And, eating real food will fuel your body and keep you and your family feeling so much better. It is totally worth it in the end. I hope you all have an amazing weekend and I will be back again soon!
