Strawberry Cucumber Mint Slushie
I think we all can agree that ice cold beverages are always a must during the summer months. I remember as a kid eating popsicles everyday and slushies from 7-11. They tasted great but were not so great for my body. Most of the sweet enjoyable cold drinks and treats are full of synthetic food dyes and loaded with sugar/ high fructose corn syrup. Thats why now I make my own popsicles and when I do buy popsicles I get real food based ones with much lower sugar content and also ones that are at least organic and contain real fruit juice.
A couple weeks ago I had some fresh mint and I was thinking of recipes that I could utilize the mint. It was also hot as heck here in Colorado (we broke some records) so I decided to attempt a slushie. So here is my attempt which I think turned out pretty good! If you make it please let me know and leave a comment in the comment section :) You could even add a little Tequila or Vodka for an adult beverage which I have not done yet but just sounds delicious.
I did used frozen Strawberries in this recipe, but, since Strawberries are in season this would be delicious with fresh ones if you can find some good one that are nice and ripe. If you do decide to use fresh decrease the water measurements to 1 cup, add 2 cups of ice, and sub out the fresh Strawberries for frozen keeping the same measurement. I hope you all enjoy!!
Servings: 3-4
Ingredients:
- 3 Cups Filtered Water
- 2 Cups Frozen Strawberries ( can sub fresh strawberries but make note to the measurement changes written above)
- 1/2 Cucumber Peeled
- 5 Fresh Mint Leaves
- 2-3 TBSP Raw Honey ( for Vegan option sup maple syrup or coconut sugar but taste will be different)
Directions:
- Add all ingredients to a blender and blend until completely blended. Enjoy immediately!!
