Cucumber Mango Salsa

Cucumber Mango Salsa

 Everything about mangos I love, their sweetness and their juiciness. They also make a great salsa. Since this salsa has no tomatoes it makes it nightshade free for anyone on an AIP (autoimmune paleo) protocol. Try this salsa with some plantain chips or use it as a topping for a Taco salad or Taco bowl, it would even taste great as a topping for grilled chicken. Enjoy!

 

Ingredients:

  • 1 1/2 large or 2 small cucumbers diced
  • 2 small mangos diced
  • 1/4 diced yellow onion
  •  juice of 1 lime or lemon
  • 1/4 cup chopped fresh cilantro
  •  1/2 tsp sea salt

Directions: Mix all ingredients together in a container and it is ready to serve
