Cilantro Lime Cauliflower Rice

Riced cauliflower is a favorite of mine. It's a great way to get in extra veggies. Any dish where rice would be used you can just sub in cauliflower rice and the kids can't even tell. You can use a whole cauliflower and rice it using a food processor or a cheese grater. If you want to save some time, Trader Joes has bagged frozen organic cauliflower rice. I always stock up on a ton when I go. Makes life SO much easier. If you have a Trader Joes in your area I definitely recommend stocking up on some. This recipe was inspired by Chipotle's cilantro lime rice. I made this specifically to go with my Taco Salad Bowl recipe. 

Serving size: 2

Ingredients:

  • 1 head of cauliflower riced or 1 bag of Trader Joes cauliflower rice
  • 1TBSP coconut oil
  • 1/2tsp sea salt
  • Juice of 1 lime
  • 1/4c fresh cilantro chopped

Directions: If using fresh cauliflower place in a saucepan cover with about 1-2TBP water and coconut oil and cook on low heat until tender. Then add in remaining ingredients except cilantro and cook for 5 min longer on low heat. Mix in cilantro then serve. If using store bought frozen cauliflower rice, cook the same except only add the coconut oil when cooking no water needed.
