Avocado Tuna Salad
I'm kinda obsessed with avocados. I think I could literally eat them with about anything! I eat them plain with a little sea salt, add them to salads and smoothies, throw them in my eggs and love making guacamole. So the other day as I was playing around with making lunch I decided to take some canned tuna toss in some stuff I had a round the kitchen, and instead of mayo I subbed in avocado, cause duh, like bacon avocado makes everything taste better! It all took me a total of about 5 minutes to put together and was surprisingly tasty as well. Which meant of course I had to share with all of you guys. This one bowl meal has it all, protein, good fats, and cards from fruits and veggies. You can literally just serve this straight as your meal or eat it on top of some mixed salad greens. This is definitely a nice switch up to your regular plain tuna fish salad.
Serves : 1-2
Ingredients:
- 1 can Albacore Tune
- 1/2 Large Apple chopped
- 1 Avocado
- 1/8th Medium Yellow Onion chopped/minced
- 1 Stalk of Celery chopped
- 1/4tsp Sea Salt
- Black pepper to taste
Directions: Add canned tune along with other ingredients and mix until avocado is a creamy consistency and mixed with all the other ingredients. Adjust the amount of pepper to taste. Serve as is or add to a bed of mixed salad greens. Enjoy!!!
