Simple Creamy Dairy Free Ranch Dressing
You often see kids drench their salads and veggies in ranch dressing which seems like a great idea cause they are at least getting in some vegetables. But in reality most of the ranch the kids are using is full of sugars, harmful fats such as soybean and canola oil, and full of GMO's (Genetically Modified Organisms). They are probably doing more harm than good actually! Of course my kids are always seeing other kids at school with ranch dip so I decided to come up with a simple recipe that uses either already prepared homemade mayo or my favorite prepared mayo Primal Kitchen which means you can you can fix this recipe within minutes. This ranch is full of good fats from coconut milk and avocado oil and has non of the bad stuff. All three of my older kids love this recipe and use it for salad dressing and to dip veggies in!
Servings: Makes 3/4 cup of Ranch
Ingredients:
- 1/2 c Primal Kitchen Foods mayo or homemade mayo
- 1/4 c Full fat canned coconut milk
- 2TBSP Fresh chives chopped finely (green onions also work well)
- 1 Large garlic clove crushed
- 1tsp dried dill
- 1tsp dried parsley
- 1/4tsp sea salt
- 1 1/2 tsp fresh squeezed lemon juice
Directions: Combine in a bowl coconut milk and mayonnaise and whip until lumps are not present. Mix in the remaining ingredients and you are done. It's really that simple folks!!!
